Recipe for making achiote marinated chicken

Achiote is a South American spice made from the seeds of the achiote tree. It has a slightly musky flavor and is often used as a natural food coloring. Achiote paste is usually used as a marinade for chicken or fish.

Ingredients:

1 tsp. achiote paste
1/4 cup olive oil
1 lime, juiced
1/2 tsp. cumin
1/4 tsp. chili powder
1/4 tsp. garlic powder
sea salt and black pepper to taste

Instructions:

Mix all of the ingredients together in a bowl.
Place the chicken in a resealable bag and pour the marinade over top.
Seal the bag and place in the fridge for at least 2 hours, or overnight.
When ready to cook, Preheat your grill, or heat a skillet on the stove over medium high heat.
Grill or cook the chicken for about 8 minutes per side, or until cooked through. Enjoy!

Achiote paste can be found in Latin American markets, or in the Hispanic aisle of your local supermarket. This recipe is perfect for summer BBQs and can be served with rice and beans, or your favorite salad
