Ingredients:
1 lb chicken breasts, cut into cubes
1/2 cup all-purpose flour
1 tsp salt
1/4 tsp black pepper
3 tbsp vegetable oil
1/2 onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 (14 oz) can diced tomatoes
1 (6 oz) can tomato paste
1/4 cup white sugar
1/2 tsp dried oregano
1/2 tsp dried basil
1 cup water
1/4 cup chopped parsley
Instructions:
1) Preheat oven to 350 degrees F.
2) In a large bowl, combine flour, salt, and pepper. Add chicken cubes and coat evenly.
3) In a large skillet over medium heat, heat oil. Add coated chicken and cook until browned, about 5 minutes per side. Remove from skillet and set aside.
4) To the same skillet, add onions, bell peppers, and garlic. Cook until onions are translucent.
5) Add diced tomatoes, tomato paste, sugar, oregano, basil, and water. Stir until well combined and bring to a simmer.
6) Add browned chicken back to the skillet and simmer for 30 minutes, or until chicken is cooked through.
7) Serve over cooked rice and garnish with parsley
