1/2 cup unpeeled ricotta cheese 1/4 teaspoon grated lemon zest 1/4 teaspoon vanilla extract 1 packet sugar substitute

How to make

In a small bowl, mix ricotta cheese , grated lemon zest, vanilla extract and sugar substitute. Transfer to a pretty casserole if desired and chill until ready to serve. This recipe can easily be doubled, tripled or quadrupled, but the temptation to eat the whole bowl is more easily combated by making just one serving at a time.
