Ingredients:
3 large yams, peeled and sliced into 1/2-inch thick rounds
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1/2 cup green tomatoes, chopped
1/4 cup red onions, chopped
Instructions:
Preheat oven to 375 degrees F (190 degrees C).
In a shallow dish, combine flour, salt, and pepper.
Dip yam slices in the flour mixture to coat.
In a large skillet over medium heat, heat olive oil. Add yam slices and cook for about 2 minutes per side, or until golden brown.
Remove yams from skillet and place on a greased baking sheet.
Bake in preheated oven for about 10 minutes.
Meanwhile, in the same skillet over medium heat, cook green tomatoes and red onions until soft. Add salt and pepper to taste.
