Recipe for dinner rolls made with yeast and instant grits

If you love the taste of homemade bread, but don’t always have the time to make a yeast dough from scratch, this recipe is for you. These dinner rolls are made with instant grits and a little bit of yeast, so they rise quickly and are ready to eat in about an hour. And since they’re made with grits, they have a nice, slightly crunchy texture that pairs well with any meal.

To make these rolls, you’ll need:

1 cup instant grits
1 package active dry yeast
1/4 cup warm water
1/2 cup milk
1/4 cup sugar
1 teaspoon salt
1/4 cup butter, melted
2 eggs
3-4 cups flour

Start by mixing the yeast and warm water together in a small bowl and set it aside to proof. In a medium saucepan, bring the milk to a simmer over medium heat. Add the instant grits and stir until they’re fully dissolved. Remove the pan from the heat and stir in the sugar, salt, and melted butter. Let the mixture cool until it’s just warm to the touch, then stir in the eggs. Add the proofed yeast and 2 cups of flour, stirring until everything is well combined.

The dough will be sticky, so add more flour a little bit at a time until it’s no longer sticky and forms a soft ball. Place the dough in a greased bowl, cover it with a damp towel, and let it rise in a warm place for about 30 minutes. Once it’s doubled in size, shape it into 12 rolls and place them on a greased baking sheet. Cover them with a damp towel and let them rise for another 15-20 minutes.

Preheat your oven to 375 degrees Fahrenheit and bake the rolls for 15-20 minutes, until they’re golden brown. Serve warm with butter.

Tip: If you want to make these rolls ahead of time, you can shape them into rolls and place them on a baking sheet, then cover them tightly with plastic wrap and freeze them for up to 2 months. When you’re ready to bake them, just let them thaw overnight in the refrigerator and then let them rise for the recommended time before baking
