Recipe for chicken salad with raisins and nuts and scallions

This chicken salad is a great recipe to have on hand. It’s perfect for a light lunch or dinner, and can be made ahead of time. The raisins and nuts give it a bit of sweetness and crunch, while the scallions add a bit of zest.
To make the salad, you’ll need:
1 lb. chicken breast, cooked and shredded
1/2 cup raisins
1/2 cup chopped nuts (I like to use a mix of almonds and walnuts)
2-3 scallions, thinly sliced
1/4 cup mayonnaise
1 Tbsp. vinegar
1 tsp. honey
salt and pepper, to taste
First, combine the chicken, raisins, nuts, and scallions in a large bowl. In a smaller bowl, whisk together the mayonnaise, vinegar, honey, salt and pepper. Add this to the chicken mixture and stir until everything is evenly coated.
You can serve the salad as is, or over a bed of greens. It’s also good in a sandwich or wrap. This salad will keep in the fridge for a few days, so it’s great for meal prep
