This chicken rice and kale soup is the perfect meal to cozy up with on a cold winter day. It’s packed with nutrients and flavor, and it’s so easy to make. Simply sauté some chicken and veggies, then simmer everything in chicken broth until the rice is cooked through. seasoning it with salt, pepper, and your favorite herbs.
As far as ingredients go, you’ll need:
1 lb chicken breast, diced
1 onion, diced
3 carrots, diced
2 celery stalks, diced
1 cup white rice
4 cups chicken broth
1 bunch kale, chopped
Salt, pepper, and herbs to taste
Instructions:
In a large pot or Dutch oven, sauté chicken and veggies in olive oil over medium-high heat until the chicken is cooked through. Season with salt and pepper. Add rice and chicken broth, then bring to a boil. Reduce heat to low and simmer for 20-25 minutes, or until the rice is cooked. Stir in kale and cook for another 5 minutes. Season with additional salt and pepper to taste. Serve hot.
