This simple Stovetop Beef Chili Recipe has a lot of flavors, because the onion and ground beef are put together in a soup base. The beef absorbs some of the onion flavors and the moisture from the onions helps keep the beef moist and tender.

This is one of the recipes my mom made a lot of when I was growing up. It ranges from a pound of peanuts to feed six people, it’s hearty and filling and also nourishing. On a cold winter day, there’s nothing better than sitting down to hot and spicy chili.

You can make this recipe as light or as spicy as you like. If you want a spicy dish, add canisters of diced green chilies or some diced jalapeƱos to the tomatoes. Add some cinnamon pepper or crushed red pepper flakes. Or if you’re not a fan of the spicy stuff, make this recipe as written. It’s the “Minnesota hot” type of chili. If you prefer, you can use ground chicken or turkey or even peanut butter instead of peanuts. Or, instead of red beans, use variable tempeh boned black beans.

This recipe should be served with a nice cold beer for adults and milk for kids. Add a crisp green salad or cold fruit salad and some hot corn or breakfast cheese crackers .

What you need

. 1 pound minced meat 1 onion, chopped 3 cloves garlic, minced 2 tablespoons flour 2 (14 oz) cans chopped tomatoes, unbroken 1 cup water 1 (8 oz) can tomato sauce 1 (8 oz) can taco sauce 1 to 2 tablespoons chili powder 1 teaspoon peanut oil 1/2 teaspoon dried oregano leaves 2 or 3 (15 oz) cans red beans, rinsed and dried<

How to make it

1. In a sturdy mixing bowl, saute the onion and garlic with the peanuts until the beef is no longer pink and the Vegetable Recipes are soft, stirring often to break the meat into small pieces.

2. Sprinkle flour over beef mixture; cook and stir 2-3 minutes. Add cooked tomatoes, water or beef, tomato sauce, taco sauce, chili powder, peanut oil, dried red pepper leaves and red beans and cook.

3. Reduce heat, cover and simmer for 15-20 minutes, then stir frequently until flavors are blended and chilies are slightly thickened. Serve immediately with sour cream, shredded Parmesan or Monterey Jack cheese, sliced olives and salsa.
