Raspberry macaroons covered in white chocolate with stars

ingredients

3/4 cup ground almonds 1 cup powdered sugar 1/4 cup granulated sugar 90 g egg whites 2 handfuls freeze-dried raspberry powder

Marine macaroons are not only suitable for festive events such as Christmas, birthdays, but also for weddings or just for taste :). I got this recipe from my mom a few years ago and I can’t get enough of it :).

Place the ground almonds and powdered sugar in a blender and process for 15 seconds. Then sift the mixture.

Prepare two baking sheets and line them with silicone mats that are right for macaroons. If you don’t have silicone mats, don’t despair, just pre-draw the rounds on baking paper.

Whip your egg whites until they are not too stiff and progressively beat in the granulated sugar, so that you have a stiff glossy mass. Using a spatula, incorporate the almonds, which you’ve mixed with the icing sugar and the powdered raspberry lyo, one third at a time.

Put the resulting mass into a pastry bag, cut off the tip with a diameter of 0.5 cm and form rounds on a silicone mat. Then bang the tin firmly against the liner to get rid of air bubbles in the macaroons. Let the macaroons dry and rest at room temperature for about 30 minutes. Then preheat the oven to 135 degrees and bake the macaroons for 18 minutes. Once out of the oven, allow the macaroons to cool and then carefully peel them off and place them on a plate to rest for a few more minutes.

Cream: Lightly beat the mascarpone with the sugar. Whip the whipping cream gently and then fold it into the prepared mascarpone. Using a pastry bag, spread the cream over the macaroon shells and stick together.

Melt the white chocolate in the microwave and carefully pour it over the macaroons and decorate with edible pastry stars. Decorate the macaroons all around with white confectionery beads.
