Favorite cowboy breakfast. Translated as rancher’s eggs, originally from Mexico, traditional and popular in the southwestern states of the USA.

Make a quick pickled vegetable salsa first. Peel the onion and slice it into thin strips. Slice half the peppers as well, cover them with lime juice (reserve a few slices for garnish), toss and set aside.

In a saucepan, bring a litre of water to the boil, then put in the tomatoes, the other peeled onion, garlic and chilli (as you like and dare). Bring back to the boil and cook covered for 10 minutes over a medium heat. Drain the Vegetable Recipes, then place in a blender and blend until smooth

Cut the remaining peppers into 1×1 cm cubes and place in the pan. Pour in the blended mixture, add the spices and drained beans. Bring to the boil and continue cooking over a medium heat for 8 minutes. Season with salt. Finally, add the grated cheddar cheese, stir for a few minutes until melted and set the pan aside.

In a separate frying pan, prepare the oxtails in oil and sprinkle the smoked paprika on top. The number of eggs is up to your hunger level. Also, on the side, ideally on a grill pan, dry and heat the tortillas over a high flame. Be careful not to let them burn, don’t run away from them, I recommend about 30 seconds per side.

You are at the finish line, make your HUEVOS RANCHEROS! Place a sliced tortilla on a plate, apply a layer of ranchero sauce on top, followed by the ox eye, and a piece of sauce again. Sprinkle with crumbled Balkan cheese, garnish with pickled salsa, avocado slices, cilantro and a slice of lime. Instagram: walrus.buko
