Radish Butter Sandwiches

Wholemeal bread smeared with radish butter, topped with field greens, tomato slices and sprinkled with grated carrots.

Ingredients:

10 pieces of smaller slices of whole wheat bread 3 pcs of tomatoes 2 pcs of carrots 2 handfuls field of radish For the radish butter: 150 g of watercress or lingonberries 150 g of butter 1 pc radish bundle ground pepper salt

Procedure:

1. Clean radishes thoroughly, grate finely, lightly salt and let stand for 15 minutes to release water
2. Beat the softened butter with the cranberries, salt and ground pepper until smooth so that no lumps remain
3. Drain the water from the radishes and add to the butter mixture
4. Spread the wholemeal bread with the prepared radish butter, top with the leaves of the borage, tomato slices and sprinkle with the coarsely grated carrots.
