Radicchio Salad with Brains

Breaded chicory, decorated with fried calf’s brain with egg.
Ingredients:
Procedure:
1. Cleaned and washed whole chicory buds are simmered in heated butter until tender
2. Then add the beaten eggs to the marrow, add salt and pepper and stir until the eggs are set
4. Cut the smothered radicchio buds in half lengthwise, brush the cutting surface with the prepared marrow and place 2-3 slices of peeled tomato on top
5. Serve as an appetizer or as a warm appetizer.
Recommendation:
Side dish: Toasts.
