Strong broth of rabbit skeleton, Vegetable Recipes and spices served with homemade noodles made with coarse flour, egg and water.
Ingredients:

rabbit skeleton (rabbit without back, front and back runs)

For homemade noodles:
120 g
of coarse flour
1 pk
eggs
water
Procedure:
Place the rabbit skeleton, including the head (if it has one), in a pot, add the other ingredients and cover with about 2 litres of cold water
.Boil in the pot until tender, collecting the foam (at first) during boiling (if you use a pressure cooker, you will eliminate the collection of noise and also significantly reduce the cooking time)
Clean and cut the Vegetable Recipes into fries, cook for a bite in salted water, then drain in a sieve
Return the Vegetable Recipes to the pot and add the broth, which is strained through a sieve
Cut up the rabbit meat and put it in the pot as well, add the noodles, you can cook them directly in the soup you want to serve them in or boil them in lightly salted water until tender before serving, which takes about 10 minutes and then put them in the finished soup.
Preparing homemade noodles:
Place the flour on the table (cylinder), stir in the egg with 2-3 tablespoons of water and work into a stiff dough
Divide into three loaves and cover with a tea towel, leave to rest in a warm place for 20 minutes

On a lightly floured table (rolling pin), roll out the pancakes until almost translucent and let them dry (they must not overdry!), the dry ones break, the underdried ones stick again
Fold the dried pancakes and cut them into noodles 1-2 cm long and the width of the back of a knife
Store the well-dried noodles in a glass sealed with paper.
