Rabbit Frikasé

Dried pieces of rabbit with herbs, covered with wine.
Ingredients:
Procedure:
1. Melt a knob of butter in a saucepan, add diced bacon, cleaned, cut rabbit, finely chopped onion and simmer for about 3 minutes
2. Add the spices, herbs, salt, cover with hot water and simmer covered for about 50 minutes
3. Transfer the meat portions to plates, add the egg yolks beaten with wine, lemon zest, stir, remove from the stove immediately so that the juice does not boil
5. Pour the juice over the rabbit portions and serve.
Recommendation:
Supplement: Potato croquettes or cooked rice.
