Quick rhubarb pie

140 g plain flour 120 g granulated sugar 3 pcs eggs 1 packet vanilla sugar 1 packet cinnamon sugar 50 g melted butter 1 KL baking powder salt 2 tbsp sour cream 250 g rhubarb

In a bowl, beat granulated sugar with vanilla sugar and whole eggs.

Add the melted butter and sour cream and mix everything together.

Sieve the plain flour and baking powder into the liquid mixture and add a pinch of salt.

Mix a thin batter and pour it into a buttered and floured cake tin (I used a smaller one). Add the thickly diced rhubarb, sprinkle with cinnamon sugar and two tablespoons of granulated sugar.

Bake the rhubarb cake in the oven, preheated to 180°C, for about 35 minutes. When the cake is done, sprinkle with icing sugar. Enjoy!
