Quick potato salad with mustard dressing recipe
Ingredients for salad
3 servings Lettuce 7 pieces of boiled peeled potatoes, approx. 1 bunch of spring onions 1 piece of medium sized cucumbers salt ground pepper 1,50 tbsp. oil approx. 1,50 tbsp. Sauce 100 g mayonnaise, or sour cream, or white yoghurt, about 2 tbsp. 1 tbsp. Fat mustard or Dijon mustard, approx. 1 tbsp.
Recipe preparation
1 Cut the boiled peeled potatoes into half rings, then into slices, put them in a bowl, drizzle with oil, season with salt and pepper and stir them in. Grate the cucumber into slices or cut into small cubes and add to the potatoes. If the cucumber is fresh and soft, it is not necessary to peel it. Finely chop a washed and cleaned onion with a pinch of green onion and mix it in a bowl with the potatoes and cucumber. Place the salad in the fridge and mix the dressing of mayonnaise and mustard to taste. To make it easier to pour the dressing over the salad, thin the dressing with a little cucumber sauce to a more liquid consistency. If you prefer a hotter dressing, use hot peppers instead of cucumber sauce.
TIP: How to make homemade mayonnaise
2 The salad can be served on its own, as a meatless dish, or as a side dish with grilled or roasted meat. 3 If you want a healthier salad, use sour cream or yoghurt instead of mayonnaise, or replace the mayonnaise with sour cream.
