Quick apple-pudding cake

Soft dough
250 g plain flour 2 tbsp powdered sugar 125 g butter a little milk
Apple filling
4 pcs apple 4 tbsp granulated sugar 1 KL cinnamon
Pudding
300 ml milk 1 packet Golden cob 1 packet vanilla sugar

There’s nothing like simple cakes that we conjure up from our regular stash and don’t have to go on a special shopping spree for.

Mix the flour and sugar in a bowl, add the cold butter cubes and work into a crumble with your fingers. Add milk (1 to 2 tablespoons) a tablespoon at a time until the dough comes together into a cohesive loaf. Wrap in plastic wrap and refrigerate for about 30 minutes.

In the meantime, grate the apples and mix them with the sugar and cinnamon.

Cook the custard with the milk, golden cob and vanilla sugar.

Roll out the dough into a circle, roll into a rolling pin and transfer to a pie tin (no need to grease – the dough is quite oily). Trim the edges and prick the dough with a fork.

Squeeze out the excess juice from the apple filling and layer it on top of the dough. Add the cut edges and spread the custard on top.

Bake the cake in a preheated oven at 180°C for about 30 minutes. Leave to cool and serve.
