1 tbsp butter 1 pk shallot 1 pk hokkaido pumpkin 1 pk apple 1 KL salt 1 pinch ground black pepper 1 pinch ground cinnamon 1 pinch nutmeg 1 liter vegetable broth 100 ml sweet cream
step
1. Chop the onion finely and fry in a saucepan in a little butter. Add pepper, salt, finely chopped pumpkin, grated apple and pour the broth over the mixture. Bring it to the boil and let it simmer over a low heat. Then blend the soup, add the cream and season with salt and pepper. 2. Serve the soup garnished with finely chopped apple, pumpkin seeds or even pumpkin oil.
