Pumpkin muffins

300 g Pumpkin puree (baked or boiled) 2 pcs eggs 150 g sugar (brown or coconut) 150 g Melted butter(oil) 200 g plain (spelt) flour 1 KL baking powder Chocolate chunks (optional) 1 KL baking soda 1/2 KL cinnamon ground or gingerbread spice

We tend to make these muffins especially in autumn when it’s pumpkin season they’re delicious juicy, whether for breakfast or just with coffee. I was inspired by the recipe in a cookbook a while ago but we adapted it to our tastes.
1.
Beat the eggs with the sugar and slowly add the butter, continue beating. Add the pumpkin puree and mix.

Mix all other dry ingredients in a bowl and slowly whisk by hand with a whisk into the wet mixture

Fill the muffin cups with the batter and bake in a preheated oven at 180 degrees for about 25 minutes.
