Pudding custard

ingredients

2 packets puff pastry (roll 275 g) 1.5 liters milk 3 packets vanilla pudding powder 4 tbsp semi-coarse flour 2 dl granulated sugar 2 pcs egg yolks 100 g butter 82% 1 packet vanilla sugar 1 pcs egg for spreading

A delicious and very simple custard for which you don’t have to bake the pastry sheets separately and you don’t even have the problem of slicing after baking 🙂 Everyone can easily make this custard!

1.

First, we will prepare our custard… Put the milk, all the puddings, flour in a saucepan and mix it well. Then, stirring constantly, cook it into a sort of classic custard, adding granulated and vanilla sugar before the end of cooking. Let the finished pudding cool down a little, stirring frequently.

Stir the egg yolks into the still warm custard and finally add the butter, stirring the custard slowly until it is melted in.

Roll out 1 puff pastry sheet a little larger than the size of the tin – this will go on the bottom. Mine is 35×25 cm. I used already rolled out chilled puff pastry, but it’s totally up to you 🙂 Roll out the second dough just to the exact size of the baking sheet

Line the baking sheet with parchment paper and place the larger dough so that it comes to the edges of the baking sheet. Then spread the cream evenly over the top and cover with the second pastry.

Now, using one thin knife and warm water, cut the custard into cubes before baking 🙂 Slice carefully, but a little faster, dipping the knife into the warm water in the glass each time. (For an exact idea of how to slice, watch the video).

Finally, brush the top with beaten egg and place in the oven, which we have pre-heated to 190°C for 30 minutes.

Let the baked custard cool properly. Once it has cooled, cut it with a sharp wet knife exactly along the indentations made during baking.

You can eat the custard right NOW without any waiting, just sprinkle with sugar or top with chocolate 🙂
