Puchero

Spanish soup made with beef broth, white beans, carrots, apple, salami, onion, spices and nightshade.

Ingredients:

400 g of beef 100 g garlic sausage 80 g white beans 80 g white beans 5 pcs young onions 5 pcs peppercorns 2 pcs of allspice balls 2 pcs carrots 1 pcs bean leaves 1 pk apple ground peppercorns

spike of marjoram water salt For gnocchi: 100 g of breadcrumbs 40 g bacon 40 g ham 1 pk garlic cloves 1 pk egg salt and water to cook or oil to fry

Procedure:

1. Leave the rinsed beans in water to swell, then put them in water with the meat, bay leaf, allspice, whole peppercorns and cook until tender, adding water as needed during cooking
2. Take out the meat and spices and add the diced salami, cleaned, diced carrots, chopped onions, cleaned, diced apple to the beef broth and cook for about 15 minutes
3. In the meantime, prepare gnocchi by finely chopping the ham and bacon, putting it in a bowl, adding the peeled, grated garlic, beaten egg, breadcrumbs, mix everything well and shape the dough into gnocchi, which we cook in boiling salted water or fry in hot oil
4. Season the finished soup with salt, ground pepper, marjoram and put the gnocchi in it before serving.
