Provencal Ham

Baked ham with sauce prepared with onion roux and whipped cream.
Ingredients:
Procedure:
1. Chop the onion finely and put it in a pot of water where add the crushed juniper, pepper, vinegar and salt, cook until the water evaporates
2. Make a light roux with the butter and flour, dilute it with the stock and boil until smooth
3. Add the wine and onion mixture to the sauce, boil well, then strain and stir in the whipped cream
4. Place the ham in a baking dish and pour the prepared sauce over it
5. Bake in a hot oven for about 15 minutes.
