Provencal Flan with Chorizo

Here is the recipe for Provencal Flan with Chorizo, a good light vegetable flan full of goodness, perfect to enjoy on its own for a light meal or as a side dish to meat or fish dishes.

Ingredients for 6 people:

90 g chorizo 1 onion 1 bell bell pepper 300 g zucchini 200 g cherry tomatoes 1 eggplant 1 tablespoon olive oil 3 eggs 2 tablespoons cornstarch 150 ml fresh cream 4% mg 200 ml semi-skimmed milk herbes de Provence 1 pinch of grated nutmeg Salt and pepper

Preparation:

Preheat the oven to 180°C.
Wash and dry the zucchini, bell bell pepper, eggplant and cherry tomatoes then dice them.
Peel and chop the onion then cut the chorizo into small pieces. Add the chorizo and the rest of the Vegetable Recipes, season with salt and pepper and cook for 10 minutes, stirring occasionally.
In a bowl beat the eggs with the cornflour then add the cream and milk.
Add the salt, pepper, herbs de Provence, nutmeg, and Vegetable Recipes then mix.
Pour the preparation into an ovenproof dish lined with baking paper then bake for 35 to 40 minutes.
