Prague-style snails

Preparation of snails by baking.

Procedure:
1. Soak the snails, along with the ham and crumb of the turnip, in the wine for a few minutes 2. Season, add the washed grated lemon peel and together with the egg yolks knead a smooth dough
4. Form small rolls, which you press into the shell with one end
5. Place on a ceramic dish and bake (170 °C), covered with white wine
6. Before finishing, sprinkle with grated cheese, cover again with wine and serve garnished with fresh spices and lemon slices.
Recommendation:
– Serve white toast as a side dish.

– Champagne wine or sparkling wine (sweeter sparkling wine) is suitable with snails prepared in this way.
