Potatoes salsa verde

Cooked potatoes topped with seasoned dressing.

Ingredients:

For the topping: 6 pcs of anchovy fillets 4 pcs cucumbers in sweet and sour brine 2 pcs garlic cloves 1 piece of fresh basil 2 handfuls of parsley 1 handful of capers 1 tbsp Dijon mustard 120 ml olive oil 50 ml red wine vinegar ground pepper salt 500 g small potatoes

Procedure:

1. Peel the potatoes, wash the new potatoes and boil them until tender
2. Put the peeled, minced garlic cloves into a bowl, add a small handful of coarsely chopped capers, drained, finely chopped cucumbers, finely chopped anchovy fillets, finely chopped parsley, Dijon mustard, finely chopped fresh basil leaves, add wine vinegar, oil, mix well and season with salt and ground pepper.br /> 3. Pour the prepared dressing over the still warm cooked potatoes and serve with the meat.
