Potatoes Dauphiné (dofín)

Cooked potatoes, mixed with spices and roasted in oil in the form of small nightshades.
Ingredients:

Procedure:
1. Boil the peeled potatoes and mash them
2. Heat the butter in a heavy saucepan, pour in a little water, bring to the boil, sieve in the flour and cook for 2-3 minutes, stirring constantly
3. Remove the mixture from the hob, add the beaten eggs, stir well and then stir in the mashed potatoes
4. Season with salt and pepper, stir in the grated cheese, cut out the nightshades with a spoon, place them in the hot fat and fry on both sides until golden brown

In France, potatoes prepared in this way are also baked in larger baking dishes, or even in small ones. Potatoes that are baked in larger bowls are often not peeled but cut into thin slices.
