This potato soup is made with commodity cheese, which is a type of processed cheese that is made from leftover whey after the curds have been removed. It has a mild flavor and is often used in soups and sauces. This soup also contains potatoes, onion, celery, and garlic.
To make this soup, you will need:
1 cup commodity cheese
1 onion, chopped
2 celery stalks, chopped
1 garlic clove, minced
6 cups chicken or vegetable stock
4 large potatoes, peeled and cubed
Salt and pepper to taste
Instructions:
In a large pot, melt the cheese over medium heat. Add the onion, celery, garlic, and potatoes. Cook for 3-4 minutes, stirring occasionally, until the vegetables are softened.
