Potato salad with eggs and bear garlic recipe

Green ingredients

3 servings 500 g boiled potatoes with skin on, peeled 1 pc spring onions larger 20 g bear garlic 3 pcs. 1 egg, hard-boiled salt ground pepper 60 g mayonnaise 20 g low-fat or Dijon mustard love of cucumber or hot pepper

Recipe preparation steps

1 Cut the peeled boiled potatoes into smaller pieces and put in a bowl. Add the finely chopped bear garlic leaves, the finely chopped spring onions (1 thicker or 2 weaker ones), sprinkle the green leaves and the peeled eggs, cut into smaller pieces. Season with salt and pepper and stir gently.

TIP. Add about 3-4 tablespoons of cucumber or hot pepper sauce and thin the sauce. The seasoning depends on our taste. If you want the salad to be spicier, use Dijon mustard and hot pepper. If it is milder, use full-fat mustard and cucumber relish.
