Potato pancakes with plums II.

Baked potato pancakes made of potato dough, topped with plums, sprinkled with poppy seeds and sugar, baked until golden brown.

Ingredients:

500 g of potatoes 200 g of ripe plums 100 g plum pudding 100 g mixture of ground poppy seeds with sugar (1:1) 1 tbsp smooth flour 1 teaspoon sugar 1 piece egg pinch of salt powdered sugar for sprinkling oil for frying

Procedure:

1. Grate the peeled potatoes into coarse and long noodles and squeeze out the excess water, then add the eggs, plain flour, sugar, salt and mix
2. Slowly bake small, light-coloured potato pancakes in a hot, oiled pancake pan (so that they are not fully cooked)
3. Spread them out on a baking tray lined with baking paper, surround half of the potato pancakes with plum halves and sprinkle with a mixture of poppy seeds and sugar
4. Place in an oven preheated to 170 °C and bake until golden brown
5. Brush the finished potato pancakes without plums with jam, cover them with the potato pancakes with plum, sugar them and serve immediately.
