3 servings 600 g boiled potatoes approx. 200 g hard cheese to taste: gouda, cheddar, niva, smoked cheese… 2 eggs Spices to taste: pepper, crushed cumin, your favourite spice blend nutmeg to taste herbs fine flour garlic to taste oil
Recipe preparation steps
1 Place the peeled, pre-cooked (or leftover from lunch) potatoes in a bowl and coarsely grate or mash. Add the coarsely grated cheese of your choice and two eggs. 2 If you are using Niva, there is no need to season the pancakes with salt as the cheese is salty enough. If you use smoked cheese or cheddar, the same rule applies, or you can add a little nutmeg or pepper and salt to taste. For gouda, edamame, etc., which have a less pronounced flavour, we can add spices, spice mixtures, herbs, garlic and salt to taste. 3 Mix the potato, cheese and egg mixture (with seasoning) well, thickening with plain flour if necessary. The dough should be soft, do not add too much flour (about 2-3 tablespoons). If the dough seems stickier than other doughs, don’t panic and simply roll the pancakes in coarse flour before baking. Potato dough can sometimes be thin. 4 Brush the palms of your hands with oil, remove the dough with a spoon and form patties in the palms of your hands and fry them on both sides in the hot oil in the frying pan until golden brown. 5 Serve alone with a vegetable salad or a dressing of sour cream, garlic and herbs.
