Potato pancakes with bryndza

Peel the potatoes, grate, lightly salt, let stand for a while and pour off any water. Add half of the crumbled bryndza and mix together with a fork. Set aside the other part of the bryndza for dipping.

Add the grated onion, crushed garlic and 1 egg. Season with cumin, marjoram and pepper, then add the semolina and season to taste with salt. Stir everything together.

Coat the pan with oil and heat it up. Use a tablespoon to make thin pancakes from the prepared mixture and fry them on both sides until golden brown. Place the finished pancakes on a paper kitchen towel.

While the pancakes are toasting, prepare the bryndza dip. Mix the other part of the bryndza with sour cream and stir in the chopped chives. Season with salt if necessary.

Serve. Arrange on plates and pour over the bryndza-cream dip. Enjoy!
