300 ml milk 1 packet dried yeast 250 g plain flour 250 g semi-coarse flour 1 pk medium egg 100 ml oil 2 KL salt

First, make a classic sourdough starter with milk and yeast. Let it sit for 15 minutes. In another bowl, mix the flour, egg, salt, oil and pour in the prepared sourdough starter. Let rise for 45-50 minutes.

Roll out the risen dough, sprinkle the cooked and peeled potatoes on it and finally grate the cold butter.

Fold the finished dough in the following way from right to left, top to bottom. Let it rise a little and repeat this process three times (rolling and folding). Finally, roll out and cut out any rounds you like. Brush with egg wash and bake until golden brown.
