800 g boiled potatoes in the skin a little salt 150 g plain flour a little butter for rubbing

Skin the boiled potatoes, grate when cool, add salt and progressively stir in enough flour to make a smooth dough.

Roll out the dough on a floured board and fry them on a dry Teflon pan or on a cast iron plate on a gas burner until golden brown on both sides. Brush the finished lox with butter or melted butter and serve immediately.
