Potato gnocchi / spuds with bear garlic recipe
Ingredients
4 servings 600 g potatoes, boiled with skin on, then peeled 80 g of bear garlic 1 egg 1 tsp salt fuller’s salt 200 g of coarse flour approximately
Recipe preparation steps
1 Cool the pre-boiled potatoes with skin on, then peel them and finely grate them into a bowl.
TIP: How to peel the potatoes
2 Chop the bear garlic and put it in a strainer in which it has been scalded with boiling water. Let the leaves cool and squeeze out the excess liquid. Cut them again into smaller pieces. 3 Place the prepared bear garlic in the bowl with the potatoes, add salt, beat in the egg and mix well. Then add the flour and knead well.

4 Roll out the dough into 4 to 6 pieces of equal thickness and cut them into equal sized pieces (gnocchi or wedges) with a knife or card.
