Potato doughnuts

42 g yeast 400 g boiled potatoes 1 tbsp sugar 250 ml milk 60 g melted butter 500 g semi-coarse flour 3 pcs egg yolk 1 tsp grated lemon peel 1 tbsp um pinches salt

Fine grate the boiled potatoes, add the flour, a pinch of salt, melted butter, grated lemon peel, sourdough – which we have prepared from the milk of one tablespoon of flour and fresh yeast.

Finally mix in the egg yolks, um and make a non-sticky dough, which we leave in a warm place to rest for 1 hour.

After an hour, transfer the dough to a floured board and cut out doughnuts, you can also fill the doughnuts with any filling and fry them in hot oil. Place on a paper napkin to get rid of excess fat and roll in cinnamon sugar:-)

Smear the doughnuts in enough oil, they must float. First put them in the hot oil, cover with a lid and slowly turn them over and fry them without the lid, this way the doughnuts will be beautifully fluffy and with a nice line through the middle:-)
