Potato croquettes with cheese

500 g peeled potatoes 150 g grated cheese ( gouda) 3 tbsp plain flour 1 pk egg yolk salt breadcrumbs for coating 1 KL sweet red pepper

Fantastic crunchy side dish…
1.
Cut the potatoes into cubes and boil in salted water

While still hot, mash or grate them (I personally puree them like a puree and use a blender if necessary to have a smooth mash). Let cool completely.

Add finely grated cheese, egg yolk and salt to taste.

I add the flour carefully, about 3-4 pl, but it depends on how watery the potatoes are.
5.
Place the breadcrumbs , sweet paprika in a separate bowl and mix.
6.
Form the potato mixture into cylinders, coat in breadcrumbs and bake until golden in hot oil.
