The slowly cooking pork sausage is a great example of what can be achieved with a very affordable kassler.
Ingredients for four
300g pork kassler 2 ripe tomatoes 1 diced carrot 1 large onion 1 garlic bulb (cut off the stem) 1 dl white wine vinegar 2 tbsp tomato puree2 dl olive oil 1 bunch of basil 1 tsp salt 1 tsp black pepper 2 dl water parsley and grated parmesan cheese for the sauce
Tip: Peas are a great accompaniment to meat stew
Cut the kassler into small cubes. Add a generous amount of olive oil to the casserole. Chop the onion and fry in the pot for a while. Add the kassler and stir to coat.
Dice the tomato and add to the pot. Add the rest of the ingredients, except the basil. Simmer gently under the lid for a couple of hours. When the meat starts to fall apart, stir in the basil and remove the pork rinds to simmer for a while. Serve with pasta.
