Pork la porchetta

Plecko smeared with meat mixture, twisted into a roll shape, baked until tender, served sliced for example with mashed potatoes.

Ingredients:

2 kg of pork shoulder with skin 1 kg of ground pork shoulder 2 pcs of onions 2 pcs snail 1 pc snail

2 tablespoons green fennel (sprig) 2 tablespoons rosemary olive oil pepper salt

Procedure:

1. Cut the shoulder and prepare a 2 cm high slice as for a roll, do not remove the skin
2. Place the minced shoulder in a bowl and add all the ingredients: grated garlic, finely chopped onion, chopped fennel and rosemary sprigs, add the egg, season with salt and pepper, mix
3. Rub the mixture over the shoulder, roll it up, transfer it to a baking dish and bake in a preheated oven at 200 °C until soft
