Pork fillets in lingonberry sauce

Reindeer fillet is a wonderful treat that makes you think that half of Finland could live on reindeer if it was done right. Sure to be sold all over the world.
Ingredients for four
. 600g reindeer fillets 2 dl red wine 150g lingonberries (frozen) 1 teaspoon sugar 2 teaspoons thyme cooking oil and butter salt and pepper
Obtain the meat and season with salt and pepper.meat from the fridge an hour before cooking (frozen meat in the fridge). Defrost the lingonberries if they are frozen.
Heat a frying pan and add a little butter and a splash of butter. Quickly add the water to the meat.
Soak the red wine in the pan, season with thyme and sugar. Simmer the meat in the bubbling stock under the lid for five minutes.
Remove the meat from the pan. Salt and pepper all over and place in foil to rest.
Add the lingonberries to the pan and boil the sauce briskly (3-6 min).
Remove the meat from the dumplings, drain off the juices into the sauce.
Slice the pork fillet into a serving dish and pour the sauce over the pan.
Soak the meat in the saucepan.
