Poached Hare

Baked rabbit with mushrooms, onions, bacon and potatoes.

Ingredients:

Rule for 6 servings: 1 piece for a 1.5 kg hare 3 piecesonions 1 l water 5 tbsp smooth flour 1 tbsp estragen vinegar 1 tbsp dried parsley 1 tbsp butter

1/2 tsp dried thyme 1/2 tspdried mint 800 g of potatoes 200 g hub 100 g bacon 1 dl sweet cream salt

Procedure:

1. Remove the rabbit, gut, clean thoroughly, cut into 6 pieces and wash
2. The next day, dry the meat, mix the flour with crushed dried parsley, thyme and mint, coat the portions in it
4. Grease the baking dish well with butter, put the meat in it and cover it with sliced onions
5. Clean the mushrooms, wash them, cut them into thicker slices, layer them on top of the onions, add a little salt and drizzle with half of the tarragon vinegar
6. Peel the potatoes, wash them, cut them into rounds of about 6 mm, spread them in an even layer on top of the mushrooms and sprinkle with a little salt
7. Slice the bacon into 2-3 mm thick slices, cover the potatoes with it, drizzle with vinegar and place in an oven heated to about 200 °C
