Poached Eggs on Speck

Slices of bacon browned in the pan accompanied by eggs, the latter fried in the pan so that the whites curdle and the yolk stays nice and runny.

Ingredients:

Rule for 1 serving: 4 pcs of egg 100 g salt

Procedure:

1. Place the slices of bacon in a dry Teflon pan and sear on both sides until crispy
2. Crack the eggs and carefully “dump” them on the browned bacon, turn down the heat and let the egg whites curdle, the yolk must remain intact and liquid
3. Salt to taste and serve with fresh bread.

Recommendation:

Sprinkle with herbs.
