Plum rice pudding

ingredients

250 g rice 40 g butter 60 g powdered sugar 20 g butter 20 g breadcrumbs 2 dl milk 2 pk egg 1 pk vanilla sugar 1 cup plum compote to taste lemon juice, water, salt

step

1. Cover the rice with water, add salt, butter and bring to a boil and put in the oven to simmer. Pour the milk over the hot rice and stir. 2. Beat the egg yolks with half the sugar, add the vanilla sugar, the egg whites and the other half of the sugar and stir everything into the cooled rice. 3. Put the mixture into a greased and floured baking tin, place the plums on top, pour the lemon juice over them and bake.
