Everyone in our house loves windbreakers and I got the recipe from my mother. It’s good for any occasion.
1.
Put water, butter, a pinch of salt in a saucepan and heat until the butter melts. Add the flour and stir until the batter comes away from the casserole. Remove from heat and let cool.
2.
Whisk the eggs into the cooled mixture one at a time.
3.
Pour the prepared mixture into a pastry bag and make pinwheels on a baking sheet lined with parchment paper a little further apart.
4.
Bake in a preheated oven at 220° for about 20 minutes.
5.
Cook the custard from the milk and caramel powder. Cover the top with cling film to prevent the pudding from forming a skin and leave to cool.
6.
Beat the butter with the icing sugar and gradually beat in the cooled custard, a little at a time.
7.
Slice the baked and cooled pinwheels and fill with caramel custard and whipped cream, top with chocolate
