Pineapple Soup

Soup of compote pineapple, white wine, icing sugar, lemon juice and water, served thoroughly chilled and garnished with biscuits.
Ingredients:
Procedure:
1. Chop the compote pineapple finely, sprinkle sugar in a large enough bowl, pour the juice of the compote pineapple, white wine, juice of squeezed lemon and let it rest in a cool place for 30 minutes
2. In the meantime, boil water with grated lemon zest and let it cool
3. Pour the cooled boiled water over the pineapple, stir everything thoroughly and let it rest again in a cool place, at least for 1 hour
