Pineapple pie for diet

Pineapple pie is a simple dessert, perfect to serve after a light meal, very simple to make as usual. The recipe is very very easy and quite quick to prepare, excluding the resting time of the dough.
The flavor and aroma of this pie is unmatched! The combination of the taste of pineapple and vanilla is delicious, in short, it is a dessert that is really worth trying!
Ingredients for 6 parts:
1 Homemade shortcrust pastry 4 egg yolks 40 g flour 20 g stevia 400 ml skim milk 1 vanilla bean 500 g pineapple pieces
Preparation:
Start by preparing the shortcrust pastry according to the recipe here, then put it in the fridge for 1 hour before using.
Prepare the cream: cut the vanilla bean lengthwise, then put it in a saucepan with the milk and simmer for 5 minutes on low heat.
In a bowl whisk the egg yolks with the stevia, then add the sifted flour, then add the milk without the vanilla and mix well.
Transfer the mixture to a saucepan and bring to a boil, while stirring to avoid lumps then let it cook until the cream thickens.
Transfer the cream to a large bowl, cover with cling film and let it cool completely.
Once the cream has cooled and the pastry has rested, you can start assembling your pie.Roll out the pastry into a disk no thicker than 1 cm, then use it to line a previously buttered baking pan.
Trim the excess edges of the pastry, prick the bottom with a fork, then cover with baking paper. Bake in a preheated oven at 180°, for about 25 minutes.
Remove the pie crust from the oven and let it cool, then cover it with cream, leveling the surface well.
Cut the pineapple slices in half and place them on the pie, then bake at 180° for 10 minutes. Your pineapple pie is ready to serve.
