Roasted Vegetable Recipes (eggplants, peppers and tomatoes) minced and mixed with garlic, oil and spices.
Ingredients:
Procedure:
1. Dry roast the peppers, tomatoes and eggplant in a preheated oven at 180 °C for about 30 minutes
2. Place the roasted Vegetable Recipes in a large pot, pour a little cold water over them, cover and let them steam for about 30 minutes
3. Mix the minced vegetable mixture with finely chopped garlic, hot oil, salt, pepper and let cool
5. Mix the cold Vegetable Recipes with finely chopped parsley and serve.
