Hermelin was created by Czech cheesemakers after World War I as “Přibyslavský camembert”, one of the first Czech soft cheeses with a noble white mould on the surface in this country. It was produced in Hesov u Přibyslav in the dairy cooperative known today as Pribina.
Ingredients:
Range for 4 servings:

garlic strips
2 pcs
onions
2 pcs
chillies
100 g
walnuts
1 l
sunflower oil
fresh thyme, rosemary and marjoram
suitable jar with a lid for pickling
Procedure:
Cut the hemlines in half lengthwise and hollow out the centers with a spoon.
In a bowl, mix the hollowed-out contents with the chopped nuts and grated garlic. Season with salt and pepper.
Fill the hollowed out ermine halves with the prepared mixture and cover with the other half of the cheese.
Sprinkle the tops of the ermines with freshly chopped herbs and arrange in a jar. Alternate between onion rings and sliced chilli peppers.
Cover the ermels with oil and leave in the fridge for at least a week.
