Pickled Hermelin with Walnuts

Hermelin was created by Czech cheesemakers after World War I as “Přibyslavský camembert”, one of the first Czech soft cheeses with a noble white mould on the surface in this country. It was produced in Hesov u Přibyslav in the dairy cooperative known today as Pribina.

Ingredients:

Range for 4 servings: 4 pieces of ermine

4 pcs garlic strips 2 pcs onions 2 pcs chillies 100 g walnuts 1 l sunflower oil fresh thyme, rosemary and marjoram suitable jar with a lid for pickling

Procedure:

  • Cut the hemlines in half lengthwise and hollow out the centers with a spoon.
  • In a bowl, mix the hollowed-out contents with the chopped nuts and grated garlic. Season with salt and pepper.
  • Fill the hollowed out ermine halves with the prepared mixture and cover with the other half of the cheese.
  • Sprinkle the tops of the ermines with freshly chopped herbs and arrange in a jar. Alternate between onion rings and sliced chilli peppers.
  • Cover the ermels with oil and leave in the fridge for at least a week.
