Perfect pot roast recipe

A pot roast is the perfect meal for a winter night. It’s easy to make and can be made in advance. This pot roast recipe is made with chuck roast, potatoes, carrots, onions, and garlic.
To make this pot roast, you’ll need:
1 chuck roast
1 tablespoon olive oil
1 onion, diced
4 cloves garlic, minced
1 pound carrots, peeled and cut into 1-inch pieces
2 pounds potatoes, peeled and cut into 1-inch pieces
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
Preheat oven to 375 degrees F.
Season the chuck roast with salt and pepper. Heat a large oven-proof Dutch oven over medium-high heat. Add the chuck roast and cook until browned on all sides.
Remove the chuck roast from the pan and add the olive oil, onion, and garlic. Cook until the onions are softened. Add the carrots and potatoes and cook for 5 minutes.
Add the beef broth, Worcestershire sauce, thyme, and salt and pepper to taste.
Place the chuck roast back in the pan and cover with a lid.
Bake in the preheated oven for 3 hours, or until the chuck roast is fork-tender.
Remove from the oven and let rest for 10 minutes before slicing and serving
