Peasant Pancakes

Fried pancakes of coarsely grated potatoes, mixed with chopped bacon and chopped parsley. Served with fried onions.

Ingredients:

500 g raw potatoes

. 100 g of bacon 3 pcs eggplant 2 pcs onions 1 tbsp chopped parsley smooth flour milk fat pepper

Procedure:

1. Beat the eggs with the salt and stir in enough flour to make a stiff dough
2. Add enough milk to make a pancake batter
3. Coarsely grate the potatoes into the batter, add chopped bacon, chopped parsley, salt, pepper and mix
4. Heat the lard in a frying pan and use a ladle to spread the batter
6. Fry the pancakes on each side until crispy
7. Remove the pancakes, dry them with a napkin, decorate with fried onion rings and serve warm.
