Peasant Omelette with Spring Herbs
Egg omelette with boiled potatoes and English bacon. It is flavoured with lots of herbs such as bear garlic, young nettles, chives and fennel.
Ingredients:

1. Cut the boiled potatoes into cubes, bacon into noodles, onion into cubes
2. Heat the oil in a pan, add the chopped onions, potatoes and bacon and fry, stirring constantly
3. Add the chopped herbs, stir, pour in the beaten eggs, salt and pepper
4. Serve warm directly from the pan, or quarter and place on plates.
Recommendation:
Spring herbs such as chives, asparagus, bear garlic, young nettles can be used to make a tasty omelette.
